Mini Pizzas

These lunchbox friendly mini pizzas are perfect for picky eaters as the toppings are fully customisable. Kids can get involved in the making of these and they also freeze well to be defrosted on those very busy mornings!


Ingredients

Dough

1.5 cups SR flour

1 cup greek yoghurt


Toppings

tomato based pizza sauce

cheese

ham/salami

olives

capsicum

pineapple (controversial!)

zucchini

potato

spinach

herbs


  1. Preheat oven to 180oc and line a baking tray with baking paper

  2. In a large bowl mix flour and yoghurt together and knead until a dough forms

  3. Roll out dough to desired thickness and cut into circles

  4. Re-roll any remaining dough until all utilised

  5. Place bases on baking tray and top with desired toppings

  6. Bake for 12-15 mins


Pro tip for very fussy kids: to add hidden vegetables, steam vegetables eg. carrot, capsicum, zucchini and blend with tomato paste/pizza sauce. Perfect for kids who will only eat margherita pizzas
