Taco Tuesdays

Is there a meal in your family that everyone enjoys? Ours is Taco Tuesday.
For the past 5 years we have always eaten a version of Taco Tuesday, we batch cook a huge amount of “burrito mix” and freeze it in portions that can be easily defrosted for a tasty weeknight dinner. The kids started off just eating avocado, sour cream and cheese wraps but have slowly incorporated the magical burrito mix and all the trimmings making it a nourishing and high fibre meal for everyone.
Our burrito mix recipe
1 brown onion
2 cloves garlic
1kg Beef mince
1-2 zucchinis, finely chopped
1-2 carrots, finely chopped
1 capsicum, finely chopped
Spices: cumin, coriander, paprika
2 beef stock cubes
1 jar of salsa
4 x cans of beans (kidney bean, pinto beans, chickpeas, black beans or any other bean you like!)
1 can of canned corn
Method
In a large saucepan, add onion, garlic and veggies. Cook until softened.
Add beef mince and cook until browned.
Add drained beans, corn, spices, beef stock, and salsa. Cook until simmering, stirring occasionally. Once cooked through, turn off heat.
Divide into portions and freeze

Coriander, tomato, cucumber, lettuce
Grated cheese
Burrito wraps, tacos, corn chips
